Sow Thistle (Sonchus oleraceus)

A native annual leafy green from the Mediterranean region, valued for its nutritional properties and pleasant, mildly bitter taste. Sow thistle seeds produce fast-growing plants with tender, toothed leaves rich in calcium, potassium, and vitamins A & C.

Sow August to October for autumn and winter harvests, or February to April in mild climates. Prefers cool, sunny or partially shaded locations and fertile, well-drained soils with pH 6.0–7.5. Space 20–25 cm between plants and 30–40 cm between rows.

Harvest 30–45 days after sowing, cutting leaves when fully developed. The plant regrows after cutting, allowing multiple harvests. Highly cold-tolerant and ideal for organic cultivation.
