A perennial leafy vegetable, forming large, lance-shaped green leaves (30–40 cm) with a mildly sour, spinach-like flavor. Patience dock seeds produce hardy, fast-regrowing plants, tolerant to both cold and heat, and adaptable to various soils.
Sow February to April or September to October, in sunny or partially shaded positions, with fertile, well-drained soil. Space 30–40 cm between plants and 50–60 cm between rows.
Harvest 50–60 days after sowing, cutting outer leaves regularly. Ideal for cooking, pies, and traditional dishes, rich in vitamin C, iron, and calcium. Long-lasting plants allow multiple harvests for up to 3 years.
