Italian Chicory (Cichorium intybus var. foliosum) is a leafy vegetable with a distinct, mildly bitter flavor and high nutritional value. Italian Chicory seeds produce medium to vigorous plants with elongated green leaves and pronounced midribs. Depending on the variety, the leaves may form open or compact rosettes.

This crop thrives in cool to mild climates and prefers fertile, deep, well-drained soils rich in organic matter. Sowing is carried out from August to October for autumn and winter harvests, or in spring in mild regions. Plant spacing is 25–30 cm apart and 40–50 cm between rows. Harvesting occurs about 60–90 days after sowing, once the leaves reach their full size and texture.

The Italian Chicory variety is known for its cold tolerance and adaptability. Its leaves are rich in vitamins A, C, and K, calcium, iron, and antioxidants, making it a staple of the Mediterranean diet. It is consumed both raw in salads and cooked, adding a distinctive aroma and flavor to traditional dishes.
