A prestigious Italian artichoke variety, producing large, elongated flower heads with violet-green coloration and tender, meaty hearts. Violetto di Romagna artichoke seeds grow vigorous, perennial plants with a strong root system and rich foliage. The heads are of fine texture, delicate flavor, and high commercial value.

This crop thrives in mild, sunny climates and prefers deep, fertile, well-drained soils with a pH between 6.0 and 7.5. Sowing takes place from February to May in seedbeds, with transplanting once seedlings reach 15–20 cm in height. Spacing should be 80–100 cm between plants and 120–150 cm between rows. The first heads develop 8–10 months after sowing, and production continues for 2–3 years.

Rich in fiber, vitamins C and K, potassium, calcium, and antioxidants such as cynarin, artichokes are valued for their digestive and liver-protective properties. Ideal for boiling, grilling, or traditional Mediterranean recipes, offering refined flavor and high nutritional value.
