A cool-season leafy vegetable with green, serrated leaves and a pleasantly bitter flavor. Wild endive seeds produce fast-growing, hardy plants that tolerate low temperatures well and perform best in cool climates.
Sow from August to October for autumn–winter crops, or February–March in cooler regions for spring harvest. Prefers fertile, well-drained soils rich in organic matter, with pH 6.0–7.5. Space 25–30 cm between plants and 35–45 cm between rows.
Rich in vitamins A, C, and K, minerals, and antioxidants, wild endive is valued for its distinct flavor, cold tolerance, and steady production throughout the cool season.
