The Florence Fennel (Foeniculum vulgare var. azoricum) is an aromatic vegetable with a distinctive anise-like aroma and sweet, refreshing flavor. Florence Fennel seeds produce upright plants with fine, feathery foliage and a swollen white bulb that forms the edible base of the plant. It is a species of high nutritional value, rich in essential oils, vitamins, and minerals.

Fennel grows best in cool to mild climates and prefers fertile, well-drained soils rich in organic matter. Sowing can be done in spring and autumn, either directly in the field or in seedbeds, spacing plants 25–30 cm apart and rows 40–50 cm apart. Harvesting occurs about 80–100 days after sowing, when bulbs reach full size and firmness.

The Florence Fennel is suitable for both fresh consumption and cooking, being a staple in Mediterranean and Italian cuisine. Beyond its culinary value, it also provides digestive benefits, thanks to its natural essential oils.
