Το κουνουπίδι (Brassica oleracea var. botrytis) είναι φυτό ψυχρής εποχής, καλλιεργούμενο για τις χαρακτηριστικές, συμπαγείς ανθοκεφαλές του που αποτελούν το βρώσιμο μέρος του φυτού. Οι σπόροι κουνουπιδιού δίνουν φυτά μέτριας έως ζωηρής ανάπτυξης, με μεγάλα, πλατιά φύλλα που προστατεύουν τον σχηματιζόμενο ανθό. Οι κεφαλές είναι λευκές, πυκνές και σφικτές, με εξαιρετική γεύση και υφή.

Το κουνουπίδι ευδοκιμεί σε δροσερό έως ψυχρό κλίμα και προτιμά βαθιά, γόνιμα, καλά στραγγιζόμενα εδάφη. Η σπορά πραγματοποιείται από Αύγουστο έως Οκτώβριο για φθινοπωρινή καλλιέργεια, και από Ιανουάριο έως Μάρτιο για ανοιξιάτικη παραγωγή. Οι αποστάσεις φύτευσης είναι περίπου 50–70 cm μεταξύ των φυτών και 70–80 cm μεταξύ των γραμμών. Η συγκομιδή γίνεται 80–120 ημέρες μετά τη σπορά, ανάλογα με την ποικιλία και τις συνθήκες ανάπτυξης.

Το κουνουπίδι είναι πλούσιο σε βιταμίνες C και Κ, φυτικές ίνες και αντιοξειδωτικά, ενώ έχει χαμηλή θερμιδική αξία. Χρησιμοποιείται μαγειρεμένο ή ωμό σε σαλάτες, βραστά, σούπες και φούρνου. Αποτελεί βασικό είδος διατροφής και ένα από τα πιο δημοφιλή λαχανικά της μεσογειακής κουζίνας.
