Το μαλακό λάχανο (Brassica oleracea var. capitata) είναι ποικιλία ψυχρής εποχής, γνωστή για τα τρυφερά φύλλα και τις συμπαγείς, σφαιρικές κεφαλές της. Οι αποστάσεις φύτευσης είναι 40–50 cm μεταξύ των φυτών και 60–70 cm μεταξύ των γραμμών. Η συγκομιδή πραγματοποιείται 90–120 ημέρες μετά τη σπορά, ανάλογα με την εποχή και τις συνθήκες ανάπτυξης.
